Vegan/GF Moringa Pearls

Moringa pearls are an excellent refreshing treat. Their cold exterior and chewy interior make for a perfect sweet indulgence. Don't fret, these yummy pearls can be enjoyed guilt free as their ingredients are wholesome and healthy. Perfect for boosting your energy or a post workout snack. 

 

 

Place the almonds, coconut flakes, Moringa and cooking oats into your blender (not a food processor) and pulse until you get crumbly flour.

 

 

Once the consistency is coarse flour add the honey and vanilla.

 

 

Spoon out medium sized chunks from the blender and roll into 1 inch balls with the palm of your hands.

 

 

When you finish rolling all the balls, place them in the freezer for about 20 minutes while you make the moringa coconut coating.

 

 

In a small saucepan place the coconut oil, coconut cream (optional), moringa and vanilla extract. Simmer over low heat until warm and well blended.  The coconut cream separates from the coconut oil so its best to stir a lot. Don't be too concerned though as it creates a nice marbling effect. 

 

 

Below is how the moringa coconut coating should look when you are finished. 

 

 

Dip the chilled moringa balls into the warm moringa coconut coating. Once they are all coated place them in the freezer again for 15 minutes. 

 

 

 

 

Next they need to be dipped for their second coating.

 

 

You can see how the second coating hardens and really changes the color of the pearls. 

 

 

Place them in the freezer again before serving. Be careful to not leave them out too long as they melt quickly. Garnish with loose tea leaves and serve with a tart fruit like cherries. 

 

 

The inside will be cold and chewy. A perfect chilled treat for the summer. 

 

 

 

Make sure to store them in the freezer in an airtight container as the coconut coating will melt rather quickly. 

 

Ingredients

 

Pearls

  • Almonds (1 cup)

  • Coconut flakes (1cup)

  • GF cooking oats (1/4 cup)

  • Coconut flour (2 tbsp)

  • Moringa (1 tbsp)

  • Honey (3 tbsp)

  • Vanilla extract (1 tsp)

 

Coating

  • Coconut oil (4 tbsp)

  • Vanilla (1/4 tsp)

  • Moringa (1/2 tbsp)

  • Coconut cream (1 tbsp optional)

 

Directions

 

  1. Place the almonds, coconut flakes, Moringa and cooking oats into your blender (not a food processor) and pulse until you get crumbly flour.

  2. Add the honey and vanilla to get sticky dough like texture.

  3. Spoon out medium sized chunks from the blender and roll into 1 inch balls with the palm of your hands.

  4. When you finish rolling all the balls, place them in the freezer for about 20 minutes while you make the Moringa coconut coating.

  5. In a small saucepan simmer the coconut oil, coconut cream (optional), Moringa and vanilla extract over low heat.

  6. When you are ready to coat place the coating in a short glass and dip each ball around in the coating.

  7. Place in the freezer for 15 minutes before covering the pearls with a second coating.

  8. Chill again in the freezer before serving. Store Moringa pearls in an airtight container in the freezer.
