Moringa Pea Soup

Detoxify your body with this clean and healthy moringa pea soup. You can eat it hot or chilled, making it a perfect compliment to a refreshing spring day.

It is highly recommended to make your own vegetable broth as it's so simple and easy! Below are all the ingredients you need! Plus coconut oil.

Simply chop the veggies into thick pieces and boil them in a pot.

In another pot add the peas and cauliflower along with the 2 cups of fresh vegetable broth. After simmering for an hour, blend with the remaining ingredients and enjoy warm or chilled.

Ingredients:

Soup:

  • Shallots (4 thinly sliced)

  • Peas (2 cups fresh or frozen)

  • Cauliflower (1 cup)

  • Vegetable stock (3 cups, below are directions for making the broth)

  • Coconut milk (1 cup)

  • Coconut oil (1 tbsp)

  • Moringa (1 tsp)

  • Mint (8 leaves if serving chilled)

  • Lime (1/2-1 lime if serving cold depending on how tang you want it)

Vegetable broth

  • Carrots (2 chopped large)

  • Celery robs (2 chopped large)

  • Onion (1/2 large onion

  • Shallots (1)

  • Scallions (2 mini bundles or about 7 long strands)

  • Coconut oil (1tbsp)

  • Salt & pepper to taste

Directions:

Soup:

  1. Make the vegetable broth

  2. Sautee the shallots in coconut oil until soft.

  3. Add the peas, cauliflower and vegetable stock and simmer for about 30 minutes.

  4. Once the cauliflower is soft blend the soup (in a blender not food processor) with the coconut milk and moringa. If you plan on eating it chilled also blend in mint and lime juice.

  5. Serve warm with fresh scallions or chill in the refrigerator for 4 hours before serving.

Vegetable broth:

  1. Place the chopped vegetable in a pot and cover with water.

  2. Add the coconut oil and simmer for 1 hour

  3. Strain and use the broth for your soup. The leftover cooked veggies make a great side dish!
